About the role

Vapiano is looking for a Product Quality Specialist to ensure the highest standards of food quality, safety, and operational processes across its restaurant network. You will work closely with supply‑chain partners, restaurant managers and the central kitchen to drive continuous improvement.

Key responsibilities

• Manage and analyse pricing, margins and COGS.
• Maintain inventory programmes, product data and recipes.
• Update food and beverage menus and propose changes.
• Analyse inventories and develop warehouse processes.
• Oversee procurement – price, quality and process.
• Collaborate with Apollo Group Supply Chain, Vapiano HQ, suppliers and partners.
• Support and train restaurant managers on product management, quality, hygiene and food safety.
• Conduct regular quality, hygiene, raw‑material and food‑safety audits in restaurants and the central kitchen.
• Resolve operational issues with the operations manager and support new projects.

Required profile

• Analytical, systematic and solution‑oriented.
• Previous experience in catering, product management, quality, procurement or restaurant operations.
• Good understanding of COGS, margins, inventories and stock management.
• Strong knowledge of HACCP principles, food safety and hygiene.
• Basic knowledge of food preparation techniques and technology.
• Very good command of Estonian and English.
• Willingness to travel for work.

Required skills

• Advanced Excel proficiency.
• HACCP knowledge.
